The time has arrived, when the last thing I want to do is turn the stove on in my kitchen–yes this happens to us food bloggers as well! Do any of you experience this? When I was a kid, I relished the handful of hot days in foggy and soggy San Francisco, when my mom just didn’t want to turn on the stove. Homes in San Francisco just don’t have air conditioning, so during those short-lived heat waves, our home became sweltering sauna. On those days, my mom gave us what is called “Nawashif” in Arabic. Nawashif means a collection of snacks that can basically form a meal. Examples of nawashif would be hummus with a side of cucumbers, pita, and cheese. Or just a platter of cut up watermelon, grapes, and fresh farmer cheese with crusty bread. Indeed those were my favorite dinners as a kid!
So in the spirit of nawashif, I bring to you hummus pizza:
To start, I slather rich and creamy hummus on chewy and crusty bread–no need for tomato sauce. I do like a little sweet tomato flavor though, so I add it in with some chopped sundried tomatoes. Then I add nutty and crunchy pine nuts, zesty feta cheese, salty and meaty olives, and fresh sweet basil to create a symphony of sweet and salty flavors and textures.
Now if you like your pizza on the crispy side, then heat up any kind of flatbread you wish in a 400 degree oven for about 15 minutes before adding the toppings. I personally don’t mind the soft bread with toppings, and I prefer thick flatbreads, naan, or this king sized pizza sheet bread I found in the supermarket.
