What do you think of when you think of comfort food? A plate of french toast that is crispy on the outside and chewy on the inside? Maybe a piece of warm fruit pie with a scoop of rich ice cream? If that is your definition of deliciousness, then you are in for an easy and fun treat today!
The concept of brick toast, also known as milk and honey toast, originated in Japan, and has swept the nation through viral Tik Tok videos, Las Vegas dive bars, and Japanese karaoke joints. The concept is so simple, yet so flavorful at the same time. Take a thick chunk of brioche bread, pan fry it in some butter or ghee, and top with any variety of fruit, whether fresh, pureed, or jammed. Drizzle with honey and any kind of additional toppings, from nuts to candied honeycomb, and you are on your way to a palate popping taste sensation.

You might be thinking, (as I did) what is the big deal, it is just bread! But this dish is honestly better than bread pudding, because it is not too rich nor too sweet. It is easier and faster to execute than French toast in that there is no need to dip the bread in milk, cream, or eggs. You can make it vegan by pan frying it in coconut oil if you wish. Plus the final result is just beautiful!
Happy Father’s Day to all you dads out there, and if there is a special man in your life, maybe consider making this popular breakfast/dessert for him! Check out my video on it below, where Chef Michelle of the Hotel Intercontinental in Monterey showed me her version:
