From Garden to Gourmet: Fall Apple Roses

Hello friends…are you feeling the fall vibes yet? I am! What I need to make clear is I don’t have a green thumb, but I love to plant fruit trees. I figure I can buy them already formed, put them in the ground, add some fertilizer and water them, and they reward me every year with a bigger harvest. I managed to pick a couple of baskets of these beauties:

To celebrate this bounty, I decided to make gorgeous apple rose pastries with a mediterranean twist. These rose-shaped pastries not only showcase the freshness of apples but also add a touch of elegance to your table. These pastries, infused with orange blossom water, adorned with crushed pistachios, and sweetened with honey and apricot jam, offer a delightful blend of flavors and textures that elevate a simple treat into a sophisticated dessert:

The apple slices, thinly cut and gently spiced with cinnamon, are tender yet retain a bit of bite, offering a satisfying contrast to the buttery layers of pastry. With pre-made puff pastry, you can achieve the elegant rose shape with minimal effort. Simply thaw the dough, cut it into strips, and layer your apple slices. Rolling and shaping the dough into roses is surprisingly easy, and the results look as though they’ve come from a high-end bakery. This approach allows you to create a fancy, delicious pastry without the time-consuming process of making and chilling dough from scratch.

While store-bought puff pastry is a great option for convenience, there are notable benefits to making pastries from scratch. Homemade puff pastry allows you to control the ingredients, with no artificial colors, flavors, or preservatives. Crafting your own dough also provides a sense of accomplishment and allows for creative adjustments, such as incorporating your preferred spices or adding extra layers of flavor.

Here are some important tips:

  • Prepare Your Ingredients: Have everything ready whenever you are working with dough. Preheat your oven to 375°F (190°C).
  • Assemble the Pastries: Roll out your puff pastry on a lightly floured surface to prevent the dough from sticking
  • Bake and Finish: If you don’t have muffin tins, you can place the roses on a baking sheet lined with parchment paper. 
  • Serve and Enjoy: Allow the pastries to cool slightly before serving. Enjoy them warm or at room temperature for a delightful fall treat.

APPLE ROSE PASTRIES:

  • 6 apples, but in half, cored, and thinly sliced
  • Juice of one lemon
  • 1 tsp cinnamon
  • 1 heaping tbsp honey
  • 1-2 tsp orange blossom water
  • ¼ cup chopped pistachios
  • ¼ cup jam of choice
  • 1 package puff pastry

Preheat the oven to 375 degrees. Start by slicing up 6 apples- you want to keep the skins on so the apples retain their shape and color, but cut out the core and stem with a paring knife. Then slice the apples thinly as they are going to form the petals for your roses. 

To prevent any browning, add the juice of one lemon. Combine with the apples thoroughly. You want the slices to be pliable so you can bend them, so place the apples in a microwave for 3 minutes to soften the apples, then drain any excess liquid. Add the ground cinnamon, honey, and orange blossom water and combine, then set aside. Partially thaw out puff pastry. On a floured cutting board, cut the dough into 6 long slices. 

Roll out the dough to widen the slices. On one side of each strip, spread apricot jam. On the other half arrange the apple slices so that the curve of the slices stick out on the other side. Sprinkle crushed pistachios onto the apricot jam side of the pastry, Now fold over the dough half way up, covering up the jam side. Then roll up each strip to make a rose. Add the roses to a buttered muffin tin and bake at 375 degrees for about 40 minutes.
